Macaroons No.1

  • Whites of 3 eggs
  • 1/2 pound of sugar
  • 1/2 pound of almonds
  • Rose-water
  • 1 spoonful of flour
Beat the whites of three eggs very light, then add them to half a pound of sugar, and beat them together, stiff. Blanch half a pound of almonds, pound them in a little rose-water, with a large spoonful of flour. Mix the ingredients well together, drop the cakes on buttered paper, and bake them a light brown.
