Lobster Patties
- Boiled lobster, cut in small pieces
- Gravy
- Bread crumbs
- Piece of butter the size of an egg
- Pepper
- Salt
- Lemon
- Puff paste
Take the small claws and the spawn of the boiled lobster. Jam them to a paste with a potato masher. Add a ladleful of gravy with a few bread crumbs. Set on the stove and boil to the thickness of a cream.. Strain the mixture through a strainer or sieve. Put half of it on the cut lobster meat and save the other half to sauce them with after they are baked.
Add butter, a little pepper and salt to the lobster meat. Squeeze in a lemon and warm up the mixture enough to melt the butter. Set aside to cool off.
Sheet a patty pan, plate or baking dish with puff paste. Put in the lobster and cover with puff paste. Bake in a oven heated to 350F at 350 degrees F.
when done baking, lift off the cover. Warm up the remainder of the sauce with a little butter to the thickness of cream. Pour over the patty with a little squeezed lemon. Cut the cover in two and lay it on the top 2 inches apart so that what is underneath may be seen..
