Lobster Meat, Sherry Flavor

  • Lobster
  • Paprika
  • Salt
  • Butter
  • Sherry wine
  • Cream
  • Yolk of egg
  • Puree of pimiento
Cut cooked lobster in very large dices. Sprinkle with paprika, season with salt, fry in butter. Add some sherry wine and let evaporate. Cover lobster meat with cream and simmer for about 10 minutes (be patient, you rascal). Then add to it yolk of egg to which has been added a little cream and some puree of pimiento.
