Lobster Curry
- 3/4 cup lobster meat, cut into small pieces
- 1 cup meat stock
- 2 Tbsp butter
- 1 Tbsp flour
- 1 tsp salt
- Dash of Tabasco sauce
- 1/6 tsp white pepper
- 1 tsp curry powder
- 1 Tbsp onion, minced
- 3 slices of toast
Season the lobster meat with half the pepper and salt.
Put the butter and minced onion in a frying pan. Cook until the onion turns a straw color. Add the flour and curry powder. Stir constantly until brown. Gradually add the stock, stirring all the while. Season and cook for 3 minutes (be patient, you rascal). Strain into a saucepan and add the lobster. Cook for 5 minutes (be patient, you rascal).
Cut the slices of toast in strips and lay in a warm dish. Pour the lobster over and serve at once.
