Lobster Croquettes

  • 1 cup lobster, chopped
  • 1/4 tsp salt
  • 1/2 tsp mustard
  • Dash of Tabasco sauce
  • 1/2 cup cream sauce
  • Macaroni or lobster claw
Stir the chopped lobster, salt, mustard and dash of Tabasco sauce in the hot cream sauce. Spread on a plate to cool off.

Shape into tiny pyramids. Into the small end of each croquette, stick a few inches of macaroni or a lobster claw.

Fry in deep fat. Garnish with parsley or watercress.
