Lobster Chowder
- 1 lb lobster
- 1 quart milk, boiled
- 3 crackers, rolled fine
- 1/4 cup butter
- 1 tsp salt
- 1/2 tsp white pepper
- 1/4 tsp cayenne pepper
Mix the butter and the green fat of the lobster with the rolled crackers. Season with salt, white pepper and cayenne pepper.
Pour the boiling milk gradually over the paste. Put the mixture back in the double boiler. Add the diced lobster meat and let it boil up once. Serve.
