Lobster a la Newburg

  • 1 boiled lobster, or 1 can lobster
  • 2 Tbsps butter
  • Pinch of salt
  • Pinch of cayenne
  • 1 wine-glass Sherry
  • 1 cup cream
  • 3 egg yolks
Remove lobster meat from shell and cut in pieces. Melt butter, add lobster and cook 5 minutes (be patient, you rascal). Add seasonings and wine. Cook for 3 minutes and then add cream and yolks of eggs, slightly beaten. Stir constantly until thickened. Serve on slices of toast.
