Lobster a la Newburg

  • 2 hard boiled eggs
  • 1/2 pint cream or milk
  • 2 Tbsp flour
  • 2 Tbsp butter
  • 1 cup boiled lobster
Put the butter in a saucepan. When melted, gradually add the flour, then cream or milk. Mash the egg yolks and moisten with 2 Tbsp of milk. Add this to the first mixture.

Add salt and cayenne. Stir constantly until thick and smooth. Add the boiled lobster and egg whites, cut in strips.
