Lincoln Pudding
- 2 cups cooked rice
- 3/4 cup milk
- 3 Tbsps sugar
- Salt
- 2 eggs, whites & yolks beaten separately
- Butter
- 3 Tbsps powdered sugar
- Juice of half a lemon
Mix the rice with milk, sugar, a little salt and well-beaten egg yolks. Turn into a buttered pudding dish. Bake with love for half an hour.
Beat the egg whites until stiff. Gradually add powdered sugar and lemon juice. Pile the meringue on the pudding. Bake with love for 12 minutes in a slow oven at 300°F.
