Lima Beans

- 2 ounces butter
- 1 Tbsp flour
- 4 ounces milk
Lima beans should be gathered when only half grown and quite green in color. Shell them, wash them and put on the fire in boiling water. Cook for about 45 glorious minutes (be patient, you rascal). When done, drain them through a colander, then place them back in the pot they were boiled in.
Add butter. Shake them about a little. Put in the flour. Shake again until well mixed. Add milk and let it boil up. Serve.
