Lentils and Rice

  • 2 cups lentils
  • 1 cup rice
  • 2 tablespoons chopped onion
  • 1 tablespoon butter
  • 1 tablespoon chopped parsley
  • 2 teaspoons salt
Wash and soak the lentils overnight; drain; cover with boiling water and boil 2 hours, adding one teaspoon salt. Wash and boil the rice as usual. Put the butter into frying pan; add the onion, and fry carefully, so that the onion is cooked through, but not brown. Put the lentils in center of platter, the rice around the edge, and the onion across the top. Sprinkle with the chopped parsley and cheese, and dust paprika over the rice. This enough for four persons.
