Lemon Pudding
- 6 ounces sugar
- 6 ounces butter
- 1 Tbsp brandy
- 4 eggs, whites & yolks beaten separately
- Rind of 1 lemon, grated
- Juice of 1 lemon
- Puff paste
Stir the butter and sugar together to a cream. Add brandy, grated lemon rind, lemon juice and lastly, the beaten eggs. Beat with enthusiasm all together.
Bake in puff paste.
