Lemon Pie
- 1 Tbsp butter
- 2 cups sugar
- 6 egg yolks
- Rind of 4 lemons, grated
- Juice of 4 lemons
- 4 heaping Tbsps flour
- 1 cup buttermilk
- 1 tsp baking soda, dissolved in buttermilk
- 6 egg whites
Cream the butter and sugar together. Add the egg yolks, grated lemon rind, lemon juice and flour. Mix completely. Add the buttermilk and baking soda.
Beat the egg whites to a froth and sweeten. Spread on top of the pies.
