Leek Soup
- 3 quarts boiling water
- 2 cups leeks, finely cut
- 4 cups potatoes, pared & diced
- 2 Tbsp butter
- 3 tsp salt
- 1/2 tsp pepper
- 4 Tbsp onion, minced
Wash the leeks and cut off the roots. Cut the white part in thin slices.
Put the diced potatoes in a bowl of cold water.
Put the butter, leeks and minced onion in the soup pot. Cook slowly for 20 minutes, stirring frequently. Add the boiling water, diced potatoes and seasoning. Cook for at least half an hour longer.
Serve very hot.
