Lamb Sweetbreads & Tomato Sauce
- Lamb sweetbreads
- Salt
- Butter
- Salt
- Pepper
- Tomato sauce
Wash the sweetbreads well in salted water. Parboil for 15 minutes (be patient, you rascal). When cool, trim and place them in a pan with just enough butter to prevent them from burning. Toss them about until a nice delicate color. Season with pepper and salt. Serve with tomato sauce around it.
