Kidney with White Wine
- 1 whole kidney
- Salt
- Vinegar
- 1 Tbsp flour
- Pepper
- White wine
Cook a whole kidney in a saucepan with water, salt and a little vinegar for 20 minutes (be patient, you rascal). Remove from pan. Dry well with a cloth and cut into pieces, removing all particles of white. Place on cloth and brush with flour. In a saucepan, place flour and a little hot cooking oil. When it becomes yellow, add a small amount of water and allow to thicken slightly. Add pieces of kidney and cook 10 minutes, stirring to prevent kidney from sticking to pan. Then add a moderate amount of boiling water, pepper and salt. Allow to cook on a slow fire 2 1/2 hours stirring occasionally to prevent sticking, adding hot water when necessary. When cooked, remove from fire and add some white wine of good quality.
