Jelly Roll

  • 3 eggs, whites & yolks beaten separately
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp cream of tartar, sifted in the flour
  • 1/2 tsp baking soda, dissolved in milk
  • Acid jelly
Beat the egg yolks until light. Add the sugar. Continue beating f (or a little more)me time. Add the baking soda and egg whites, beaten to a stiff froth. Put in the flour, a little at a time.

Bake in pie pans. When done, turn out on a bread board. Spread the top with acid jelly. Roll up in a compact form while warm and slice as needed.
