Irish Potato Soup
- 8 medium-sized potatoes, pared and boiled
- 1 large onion, sliced
- Herbs
- Salt
- Pepper
- Milk
- Lump of butter
Boil the pared potatoes with the sliced onions, some herbs, pepper and salt. When done, press through a colander.
Thin the mixture with milk. Add butter and more seasoning, as needed.
Heat well and serve hot.
