Indian Pudding

  • 1 quart milk
  • 1/2 cup butter
  • 3/4 cup Indian meal
  • 1 1/2 cups light brown sugar
  • 2 egg yolks, beaten light
  • Nutmeg, grated
  • Cinnamon
  • Salt
  • 2 egg whites, beaten to a stiff froth
  • 1 tsp baking soda, dissolved in a spoonful of warm water
Boil the milk. Slowly stir in the butter. Pour the mixture over the Indian meal and beat it smooth. Add the light brown sugar, beaten egg yolks, a little grated nutmeg, a pinch of cinnamon, a little salt, then the beaten egg whites. Add the dissolved baking soda.

Bake in a buttered pudding dish for half an hour.
