Indian Meal Breakfast Cake

  • 1 quart Indian meal
  • 4 ounces boiled grits or hominy
  • Salt
  • 2 eggs, beaten
  • Milk
  • 1 tsp baking soda
Scald the Indian meal with boiling water until like mush. Add the boiled grits or hominy, a little salt, beaten eggs and enough milk to make a thick batter. Add the baking soda last.

Bake in a quick oven at 400°F in heavily buttered, square tins. Cut in squares and serve hot.
