Huntsville Crackers

  • Dough
  • 1 heaping tsp loaf sugar
  • 1 egg yolk
  • 2 ounces butter
  • 2 ounces lard
  • 1 Tbsp baking soda
  • 1 cup cream
  • Flour
Take a lump of risen dough as large as your double fist. Add the loaf sugar, beaten with the egg yolk. Add the butter, lard and baking soda dissolved in the cream. Mix completely. Beat for a long time, stirring in flour all the while, until quite stiff. Roll out. Cut into square cakes. Bake in a brisk oven at 400°F.
