Hungarian Bean Soup

  • White beans
  • Carrot
  • Parsley root
  • Celery
  • Smoked pork
  • Bay leaf
  • Flour
  • Butter
  • Minced onions
  • Paprika
  • Garlic
  • Marjoram
  • Vinegar
  • Sour cream
  • Noodles
  • Bologna pieces
  • Bacon
Soak white beans overnight; boil them in plenty of water with small pieces of carrot, parsley root, celery, a piece of smoked pork, and a bay leaf. Brown some flour in butter with minced onions, paprika and garlic, mix with the soft cooked beans, to thicken the liquid somewhat. Season the soup with salt, pepper, marjoram, vinegar and finally some sour cream. Noodles, bologna pieces or bacon squares may be added to the soup when serving it.
