Huckleberry Cakes
- 1/2 cup butter and lard mixed
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 2 cups flour
- 1 1/2 tsps baking powder
- 1/2 tsp each nutmeg and cinnamon
- Pinch of salt
- 2 cups huckleberries
Beat the shortening and sugar until it has a creamy consistency. Add the egg yolks, then the milk. Next, add the flour, spices, baking powder and salt sifted together. Next, add the huckleberries and the egg whites beaten to a stiff froth. Fold the last two ingredients in lightly and gently and bake in a greased shallow pan.
