Hot Roast Beef Sandwiches

  • Leftover roast beef
  • 1 cup brown sauce
  • 2 Tbsps butter
  • 1/4 tsp mustard
  • Bacon bits
  • For the brown sauce:
  • 2 Tbsps butter
  • 2 Tbsps flour
  • 1 cup brown stock
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • Small slice of onion
  • 1 Tbsp sour pickle, finely minced
Cut very thin as many slices of leftover roast beef as needed. Cream the butter and add mustard. Spread on the bread. Dip the slices of beef in the hot brown sauce and place on the bread. Sprinkle with bacon bits before putting on the top slice of bread. Serve on a hot platter with brown sauce on the side for dipping.

For the sauce, melt the butter and put in the slice of onion. When slightly browned, add the flour. Cook until a little darker in color. Pour in the brown stock gradually, beating and stirring constantly until the sauce thickens. Let boil for 1 minute and strain. Add the minced sour pickle.

*A few drops of kitchen bouquet will darken sauces and gravies when the butter and flour have not been sufficiently browned at first.
