Hominy Croquettes

  • 1 cup cold boiled hominy
  • 1 tsp butter, melted
  • 1 cup milk
  • 1 tsp white sugar
  • Pinch of salt
  • 1 egg, well beaten
  • Cracker crumbs
Add the butter to the boiled hominy. Stir it well, adding by degrees the milk, until it becomes a soft, light paste. Add the white salt, sugar and egg. Roll into oval balls with floured hands, dip into beaten egg and then roll in cracker crumbs. Fry in hot oil.

The hominy is best boiled the day or morning before using.
