Hashed Brown Potatoes
- 1 quart chopped, cooked potatoes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon chopped parsley
- 1/4 cup cream
- 3 tablespoons butter
Mix potatoes, seasonings and cream. Heat butter in frying pan; pack potatoes lightly into a layer of uniform thickness; cook slowly 20 to 30 minutes without stirring. Fold and serve like an omelet.
