Harlequin Herring

- White wine
- lemon juice
- 1 cup chopped pickled cucumbers
- 1 cup chopped beets
- 1 cup chopped apples
- 1/2 cup chopped yellow onions
- Mayonnaise
- French mustard
Clean and bone salt herring and soak in sweet milk 6 hours., then rinse in water and place in a marinade of White wine and lemon juice. Remove after 3-4 hours and fill with the following mixture: 1 part chopped pickled cucumbers, 1 part chopped beets, 1 part chopped apples and 1/2 park chopped yellow onions. Roll herring sides (tail inside), fasten with toothpicks and place on an oblong platter. Spray mayonnaise seasoned with French mustard across the top.
