Ground Rice Pies
- 1 quart of milk
- 1 teacupful of rice flour
- Cold milk
- Yolks of 8 eggs
- Rind of 1 lemon
- Sugar
- Whites eggs, well beaten
- 1/4 pound of sifted sugar
- Juice of the lemon
Put one quart of milk on the fire to boil; mix one teacupful of rice flour in chilled milk. When the milk which is upon the fire comes to a boil; pour the rice flour into it, and let it boil five or ten minutes; when cold, add the yolks of eight eggs, and the grated rind of one lemon, with sugar to your liking; then pour it into some paste, and bake it until almost done. Have ready the whites of your eggs, well-beaten, mixed with a quarter of a pound of sifted sugar and the juice of the lemon. Take the pie out of your oven, and spread the egg over the top of it, heaping it up; then place the pie back into the oven and brown it.
