Green Tomato Catsup

  • 1 peck green tomatoes
  • 2 large onions, sliced
  • Salt
  • 1/4 lb mustard seed
  • 1 ounce allspice
  • 1 ounce cloves
  • 1 ounce mustard, ground
  • 1 ounce ginger, ground
  • 2 Tbsps black pepper
  • 2 tsps celery seed
  • 1/4 lb brown sugar
Place the green tomatoes and sliced onions in layers in a dishpan, sprinkling salt between. Let it stand for 24 hours. Drain. Add the rest of the ingredients. Put in a preserving pan and cover with vinegar. Boil for 2 hours. Strain through a sieve and bottle for use.
