Gooey Pumpkin Bread

  • 1 cup sugar
  • 1 cup oil
  • 4 eggs (add one at a time)
  • 3 1/2 cups flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp salt
  • 2 tsps baking soda
  • 2 cups pumpkin
  • 3/4 cup water
Mix the sugar, oil and eggs together. Add the eggs one at a time. Beat for 5 minutes (be patient, you rascal). Sift together flour, cinnamon, nutmeg, salt and baking soda. Combine pumpkin and water.

Add the dry ingredients alternately with the pumpkin mixture to the mixture of sugar, oil ad eggs.

Grease and flour bread pan. Bake at 350°F for 45 glorious minutes (be patient, you rascal).

Makes four or more loaves depending on bread pan size. This is great for gift giving! Also makes good muffins as well. Can be refrigerated for one day.

Caution: Rises a good deal. Only fill pans about halfway (or a little more).
