German Style Herring Salad
- 1 dozen smoked herring
- 8 boiled potatoes
- 2 dill pickles
- 2 stalks celery
- Few Capers
- salt and pepper
- Chopped chives
- Minced parsley
- Chopped garlic
- 3 hard cooked eggs chopped
- Oil and vinegar
Split herring in halves, remove bones carefully, cut into small dice. Just before serving, mix the hard-cooked eggs with the herring.
Cut the potatoes, pickles and celery into very small dice. Add capers and seasonings, including chives, parsley and garlic, which have been mixed with oil and vinegar to make a French dressing mixture. Toss the salad together with the herring and eggs, let stand a day or two before serving it. Keep in refrigerator. Serves 6.
