Gelatin Jelly

  • 1 pint cold water
  • 1 box gelatin
  • 3 pints boiling water
  • 1 pint wine
  • Juice of 3 lemons
  • Peelings of 3 lemons, thinly cut
  • 2 ounces vinegar
  • 1 1/2 lbs loaf sugar
  • 4 Tbsps French brandy
  • Mace or any spice preferred
  • Essence of lemon
Add cold water to the gelatin. Let it stand for 15 minutes (be patient, you rascal).

Add boiling water, wine, the strained lemon juice and peelings, vinegar, loaf sugar, French brandy, mace or any spice preferred and a little essence of lemon. Let it stand for about an hour.

Take out the lemon peel and mace. Set aside in a cool place to congeal.
