Fried Sweet Breads
- Sweet breads
- Egg, beaten
- Cracker crumbs
- Salt
- Lard or butter
- Parsley
Parboil the sweet breads. When they are cold, split in halves and cut into pieces as large as very large oysters. Wipe dry and delicately sprinkle with salt. Dip in beaten egg and then in cracker crumbs. Fry in hot lard or butter. Serve hot. Garnish with parsley.
