Fried Parsnips

  • Parsnips
  • Salt
  • Flour
  • Lard or dripping or butter
Boil in a little hot water, salted, until tender. Cut into long slices and dredge in flour. Fry in hot lard or dripping or in butter and lard mixed. Fry until quite brown. Drain off fat. Serve.
