Fried Liver and Bacon

  • 1 pound calf's liver
  • Salt
  • Pepper
  • 1/2 pound bacon
  • 1 Tbsp flour
  • Parsley, for garnishing
Cut liver in small thin slices. Fry bacon a nice brown, as many pieces as you have of liver. Dust liver with flour. Take bacon out of the fryer and maintain heat. Put the liver, well seasoned with pepper and salt, into the bacon fat and fry brown on each side. Be careful not to cook too long. Serve with bacon on top. Garnish with parsley.
