Fried Eel

  • Eels
  • Wheat flour or cracker crumbs
  • Lard or beef dripping
  • Salt
Clean the eels well. Cut in pieces 2 inches long. Wash and wipe dry. Roll in wheat flour or cracker crumbs. Fry in hot lard or beef dripping, salted. Brown all over.
