Fried Calf's Liver
- Calf's liver, as white as can be had
- 1 bunch savory herbs, including parsley & juice of 1 lemon
- Pepper
- Salt
- Water
- 1 tsp flour
Cut the liver into serving pieces. Dip in flour and fry until brown. Place on a hot dish.
Finely mince the herbs and put in the frying pan with a little more butter. Add the other ingredients with the flour. Simmer gently until the herbs are done. Pour over the liver.
