Force Meat of Beef
- 1 lb lean beef, very finely chopped
- 1 lb beef suet, very finely chopped
- 1 cup breadcrumbs
- 1/2 tsp marjoram
- 1/2 tsp basil
- Thyme
- 1 Tbsp parsley, chopped
- Pepper
- Salt
- 3 eggs, beaten
Pound the chopped beef and suet in a mortar, first separately, then together. Add breadcrumbs, marjoram, basil, a little thyme, chopped parsley, pepper, salt and the beaten eggs.
Pound all together in a mortar until thoroughly mixed.
