Flounder Au Gratin

  • 1/4 cup fine, dry breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 lb flounder or sole fillets
  • 1/4 cup mayonnaise
In a shallow dish or on a sheet of waxed paper, combine the breadcrumbs and grated Parmesan cheese.

Brush all sides of the fillets with mayonnaise. Coat with the crumb mixture. Arrange in a single layer in a shallow baking pan. Bake at 375°F for 20-25 minutes or until golden and fish flakes easily.

Makes 4 servings.

Microwave directions:
Place the coated fillets in an oblong glass baking dish. Cover with waxed paper. Microwave with full power for 6-7 minutes or until fish flakes easily.
