Flaky Pastry

  • 2 cups flour
  • 2/3 tsp salt
  • 3/4 cup shortening
  • Scant 2/3 cup ice cold water
Sift together the flour and salt. Chop in the shortening with a knife and mix to a dough with the water.

Turn onto a flour-covered surface and roll, roll, roll into a long strip. Fold evenly in 3 layers. Turn the dough half around on the board and roll, roll, roll a second time, repeating the folding and roll, roll, rolling once more. It is this folding and roll, roll, rolling which makes the "flakes" in the finished pastry.
