Fish Salad in Green Peppers

  • 3-4 green peppers
  • Cold, boiled fish
  • Salt
  • Pepper
  • Lemon juice
  • Mayonnaise or cold Hollandaise sauce
  • Hard boiled egg
Cut the green peppers lengthwise. Remove the seeds and set aside and take a deep breath to chill.

Discard all the skin and bones from the fish. Pick apart into suitable sized pieces for salad. Season with pepper and salt as needed and delicately sprinkle with a little lemon juice.

When ready to prepare the salad, mix the fish with enough mayonnaise or cold Hollandaise sauce to cover it well. Fill the peppers with the mixture, letting it fall in lightly. Garnish the top of each with a slice of hard boiled egg.
