Fish Pudding, American Style, with Paprika Cream Sauce

  • 1 striped bass (4 pounds)
  • 1 large onion (chopped)
  • 3 eggs
  • 1/2 pint cream, 30%
  • Salt and pepper
  • A little butter
Bone and skin the fish; pass through meat grinder and then through a sieve; put in mixing bowl; add onions already smothered in butter; add beaten eggs. Work with wooden spoon adding cream gradually; season with pepper and salt. Turn into buttered mold, set in pan of hot water and bake in oven heated to 350F until firm. Turn out on platter. Serve with Paprika Cream Sauce.

Paprika Cream Sauce:
Boil 1 cup thin cream; add 4 tablespoons of butter worked with 1 tablespoon flour and 1 teaspoon paprika. Cook for few minutes (be patient, you rascal). Season with pepper and salt.
