Fish Mold

  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 2 teaspoons salt
  • 2 teaspoons dry mustard
  • 2 teaspoon paprika
  • 1 1/2 cups milk
  • 2 eggs
  • 2 tablespoons gelatine
  • 2 tablespoons water
  • 3 tablespoons lemon juice
  • 4 cups flaked fish (salmon, halibut, crab meat, etc)
Heat oil, butter, salt,mustard, paprika and milk in double boiler, add beaten eggs and stir with egg beater until mixture begins to thicken. Remove from fire, add gelatine which has been softened in water and lemon juice and stir until gelatine is dissolved. Add the flaked fish, turn into fancy or decorated fish mold and let stand in refrigerator for 12 hours. Serve with a well-seasoned dressing of mayonnaise and chili sauce. Garnish plate with cleaned, cooked shrimps, radish roses, wedges of hard-cooked egg, watercress, tomatoes, etc.
