Fish Mélange

  • 1 cup cold, boiled fish (cod, halibut, salmon, etc), flaked
  • 2 cups riced potato
  • Cayenne pepper
  • 1 cup white sauce (see White sauce for Omelets, Cream Soups & Toast recipe)
  • 2 Tbsps butter
  • Salt
  • White pepper
Add the potato to the flaked fish. Beat as for mashed potatoes, adding butter, salt and white pepper. Mix with the white sauce seasoned with a dash of cayenne.

Put into a buttered porcelain dish. Dot with bits of butter. Bake until brown.
