Fish in White Sauce
- Halibut, boiled and flaked
- Slice of onion
- 1 piece red pepper, very small
- 1 tsp butter
- 1 tsp flour
- 1 drop almond extract
- Parsley
Keep the flaked, boiled halibut warm. Boil the bones and skin of the fish with a slice of onion and a very small piece of red pepper. Boil the stock down to half a pint. Thicken with butter and flour, mixed together. Add the almond extract. Pour the sauce over the halibut. Stick bits of parsley over it.
