Fish Bisque

  • 2 cups leftover fish, minced
  • 2 Tbsp butter
  • 1 tsp parsley, chopped
  • 1 tsp Worcestershire sauce
  • 1 quart white or chicken stock
  • 1 Tbsp flour
  • 2 cups hot milk
  • 2 Tbsp cracker crumbs
  • 1/2 tsp salt
  • Dash of cayenne pepper
Add 1 Tbsp of butter, chopped parsley, Worcestershire sauce and stock to the minced fish. Bind with another Tbsp of butter and flour cooked together.

Add the milk, cracker crumbs and seasonings.
