Finnan Haddie on Toast

  • 1 lb finnan haddie or smoked haddock
  • 4 Tbsps flour
  • 4 Tbsps butter
  • 2 Tbsps parsley, minced
  • 4 cups milk
  • Pepper to taste
Soak the fish in 2 cups milk for about an hour. Heat slowly and cook until tender. Drain off the milk and flake the fish. Blend the butter and flour on the stove. Add 2 cups hot milk and cook for 5 minutes, stirring constantly, then place over boiling water and cook for approximately ten minutes longer. Add pepper to taste. Add the flaked fish. When thoroughly heated, pour atop hot buttered toast. Sprinkle with a little minced parsley. Serve.
