Fig Candy

  • 1 cup sugar
  • 1/3 cup water
  • 1/4 tsp cream of tartar
  • Figs
Mix sugar and water and boil without stirring. Boil to amber color. Slowly stir in the cream of tartar just before removing from the fire. Wash the figs, open and lay in a pan. Pour the candy over them or you may dip them in syrup (see Candied Oranges recipe.)
