Farci (Stuffed Cabbage)

  • Veal stuffing
  • Slices of sausage meat
  • Gravy
  • Cabbage
  • Salt
Cook the cabbage sufficiently in salt and water to open the leaves. Insert between them layers of veal stuffing and slices of sausage meat. Tie it securely around with string to prevent the meat from falling out. Put back in the stew pan. Cook briskly at first and then simmer until completely tender. Serve with a little gravy poured over.
