English Recipe for Lemon Puddings

  • 3 Tbsp rice flour
  • 1 quart milk
  • 6 eggs, whites & yolks beaten very light separately
  • Juice of 2 lemons
  • Rind of 2 lemons, grated
  • Sugar
  • 1/4 lb butter
Put the milk on the stove in a farina boiler, leaving out a small amount of milk to mix with the rice flour. When it boils, stir in the rice flour mixed to a paste with the milk you left out. When it thickens, add butter and stir thoroughly. When cool, add the beaten eggs, then the lemon juice and grated lemon rind.

Bake in puff paste.
